Sorry mate, but unfortunately, that's a wasted pick as you don't get any extra points for that. You simply get the double points for having her as one of your stable stars. You can't get triple points.

So everyone make sure they keep a list of the 3 horses they chose earlier as their stable stars, because you have to remember not to choose them again when they race.
