Well, the first step is to find a conversion chart suitable for using with the ratings. Don Scott's was very good and this one that I use is sort of similar to his. My conversion chart is actually for weight ratings though. It goes down in 0.5kg lots and only goes to 10 kgs below the top rated, so I'm not actually sure it will work all that well on these Unitab ratings. I'll give it a try though.

Top rated horse = 100 pts
0.5 kgs below = 85 pts
1.0 kg below = 70 pts
1.5 kgs below = 60 pts
2.0 kgs below = 50 pts
2.5 kgs below = 44 pts
3.0 kgs below = 38 pts
3.5 kgs below = 33 pts
4.0 kgs below = 28 pts
4.5 kgs below = 24 pts
5.0 kgs below = 20 pts
5.5 kgs below = 17 pts
6.0 kgs below = 14 pts
6.5 kgs below = 12 pts
7.0 kgs below = 10 pts
7.5 kgs below = 8 pts
8.0 kgs below = 6 pts
8.5 kgs below = 4 pts
9.0 kgs below = 3 pts
9.5 kgs below = 2 pts
10.0 kgs below = 1 pt

Now to use it on a race. Here's Echuca Race 9 from today's racing:

1 Kelthorpe Rtg 100, 100 pts
2 Emitella Rtg 96, 28 pts
3 Al Bahar Rtg 98, 50 pts
4 Lord Hatton Rtg 95, 20 pts
5 Sarah Michelle Rtg 96, 28 pts
6 Young Maverick Rtg 89, -
7 Kidancho's Reign Rtg 91, 3 pts
8 Kiss And Fly Rtg 95, 20 pts
9 What's It To You Rtg 98, 50 pts
10 Flanigan Rtg 93, 10 pts
11 Mcguiness Lane Rtg 85, -

Now, you simply add up all the scores and you get a total of 309 pts. Then simply divide 309 by each runner's score and you get an approximate dividend for that runner. Of course, you will usually have to do some rounding up or down to make the dividends more realistic. Kelthorpe was easy: 309 divided by 100 is 3.09. Round that up and you get $3.10. I couldn't get odds for two of the runners because they were rated too far below Kelthorpe.

1 Kelthorpe $3.10
2 Emitella $11.00
3 Al Bahar $6.20
4 Lord Hatton $15.50
5 Sarah Michelle $11.00
6 Young Maverick -
7 Kidancho's Reign $103.00
8 Kiss And Fly $15.50
9 What's It To You $6.20
10 Flanigan $30.90
11 Mcguiness Lane -

Of course, that is a 100% market. If you actually want a market to compare with the TAB prices, then you really should multiply that 309 figure by 0.85 to take into account the TAB's tax takeout. If you do that, you get 263. Then divide 263 by each runner's score and you'll get a price which will give you a better comparison with TAB odds.

1 Kelthorpe $2.60
2 Emitella $9.40
3 Al Bahar $5.30
4 Lord Hatton $13.20
5 Sarah Michelle $9.40
6 Young Maverick -
7 Kidancho's Reign $87.70
8 Kiss And Fly $13.20
9 What's It To You $5.30
10 Flanigan $26.30
11 Mcguiness Lane -

There you go. Tell me what you think. Someone on here probably has a much more suitable way of doing it. Personally, I think this way is nice and simple and it suits me fine.
