Could you clarify what you mean by "how 'unders' and 'overs' are calculated/formulated".
Do you mean that you want to know the formula, or you want to be able to identify what's an overlay or underlay?

If it's the latter, I don't think you'll get a sufficient answer, as value and the way it is worked out is the crux of any person's betting strategy, and one which you'll find hard to get people to share.
If anyone has calculation of the "TRUE ODDS" correct, I doubt they'd share that information too readily.
